Couscous on the run

Ingredients

  • 1 cup couscous
  • 1&3/4 cup water
  • 2 tbsp olive oil or butter
  • 2 bay leaves
  • 2 whole green cardamom
  • 2 cloves
  • 1 inch cinnamon stick
  • Salt as per taste

Directions:

1. Set aside couscous and add all remaining items to water

2. Bring water to boil with all ingredients except couscous

3. Allow water to boil for 2-3 minutes on high flame this will reduce the water content to 1&1/2cup

4. Quickly rinse couscous in running water

5. Add the rinsed couscous to boiling water and stir all ingredients for 1/2 minute

6. Remove the pan from the stove and keep aside covered with a lid for 10 minutes

7. Now open the lid and stir.

Couscous is ready with flavorful spice. You can have it with salad or any meat curry/vegetarian dish.

Note

  1. You can garnish it with red chili flakes or paprika, dry ginger and garlic powder
