Sausage and Vegetable Linguine Pasta

Ingredients:

  • 500 gm. sausage
  • 1 sweet pepper (any colour)
  • 200 gm. mushroom (cut as slices)
  • ½ cup broccoli (cut into small florets)
  • 4 celery stalks (cut into small pieces)
  • 1 fist of finely cut fresh coriander
  • 1 fist of onions cut into small cubes
  • I tsp. crushed ginger
  • 1 tsp. crushed garlic
  • 5 tbsp. grapeseeed / sunflower oil **
  • 3 tbsp. olive oil
  • 4-5 whole spicy red chili
  • 1 bottle (640 gm.) of tomato and basil pasta sauce**
  • 4 slices of cheddar cheese
  • Salt to taste

Direction for pasta preparation:

  1. Add 1 tbsp. grapeseed oil in a pan and lightly roast the sausages;
  2. Heat oven at 350 degrees and bake the roasted sausages for 25 minutes on each side;
  3. After it is baked, let it cool slightly and then cut them into thick slices or as desired. Keep it aside**;
  4. Bring a large pot of slightly salted water (or salt as desired) to a boil. After the water has boiled, add linguini along with 2 tbsp. olive oil to it. Boil linguini till it is soft and then drain all of the water in a colander. Now run cold water over the linguini and then add 1 tbsp. olive oil and mix it well**;
  5. Heat 4 tbsp. grapeseed oil in a saucepan, add onions and sauté it for few minutes till the onions soften a little but not too much, then add red chili;
  6. Now add ginger and garlic and sauté for 1 minute. Add celery and after sautéing it, add sweet pepper and sauté all ingredients together;
  7. Now add broccoli and after it is sautéed, add mushroom and sauté for a minute**;
  8. Add 3-4 tbsp. pasta sauce and cook the vegetable mix for approximately 3-4 minutes;
  9. Add cheese slices, freshly cut coriander leaves and remaining pasta sauce and let it boil;
  10. Now mix pasta, sausage and heat the entire ingredients till it is heated enough as per your requirement.

Measures:

  • -> Teaspoon
  • -> Tablespoon

 **Tips:

  1. You can take any cooking oil instead of grapeseeed or sunflower oil;
  2. You can get readymade pasta sauce at any grocery store and you can use any flavor of your choice;
  3. The sausage slices should not be too thin, otherwise it will break up and not hold well as slices;
  4. Running cold water loosens the linguini and it does not stick to each other. In addition it also removes any residual starch which would have made it gummy;
  5. Each of the ingredients should just be sautéed for a minute in the saucepan, as we want the veggies to be a little soft but crunchy. If you want the veggies to be softer, then sauté for more minutes as desired.

Your dish is now ready for eating. Serve hot.
