Ingredients:
- 1 small Broccoli (cut into small florets)
- 4 medium sized Potatoes (cut into small pieces)
- 1 Green Pepper (cut into slices)
- ½ cup of Mushroom (cut into slices)
- 2 Tbsp. Celery (cut into small pieces)
- 1fist Onion (cut into small pieces)
- 1 whole fresh Garlic (slightly smashed)
- 1 medium size zucchini (sliced thinly)
- ½ fist of Curry leaves
- ½ Tsp. Turmeric
- ½ Tsp. Red Chilly powder
- 3 Tbsp. Peanut sauce
- 3 Tbsp. Olive oil
- Salt as desired
Direction for Baking:
- Mix all the ingredients, except potatoes and keep aside for 15 minutes so that the sauces can steep into the vegetables;
- Pre-heat oven at 350 degrees;
- Once the oven has reached 350 degrees, first bake the potatoes for 10 minutes
- Then, put all the remaining ingredients in a casserole and bake it for 35-40 minutes
- You can transfer the baked veggies into a serving dish or serve it directly out of the casserole.
