Baked Mixed Vegetable Medley


  • 1 small Broccoli (cut into small florets)
  • 4 medium sized Potatoes (cut into small pieces)
  • 1 Green Pepper (cut into slices)
  • ½ cup of Mushroom (cut into slices)
  • 2 Tbsp. Celery (cut into small pieces)
  • 1fist Onion (cut into small pieces)
  • 1 whole fresh Garlic (slightly smashed)
  • 1 medium size zucchini (sliced thinly)
  • ½ fist of Curry leaves
  • ½ Tsp. Turmeric
  • ½ Tsp. Red Chilly powder
  • 3 Tbsp. Peanut sauce
  • 3 Tbsp. Olive oil
  • Salt as desired


Direction for Baking:

  1. Mix all the ingredients, except potatoes and keep aside for 15 minutes so that the sauces can steep into the vegetables;
  2. Pre-heat oven at 350 degrees;
  3. Once the oven has reached 350 degrees, first bake the potatoes for 10 minutes
  4. Then, put all the remaining ingredients in a casserole and bake it for 35-40 minutes
  5. You can transfer the baked veggies into a serving dish or serve it directly out of the casserole.

Your dish is now ready for eating.
