Salmon Coconut Curry

Marination Ingredients:

  • 1/2 Salmon Fish
  • 1/2 tsp salt
  • 14 tsp turmeric
  • 1 tsp chilly power ( I use Kashimiri chilly powder)
  • 1 tbsp yogurt

Dry Masala Ingredient:

  • 9 kashmiri chilies (or any red chillies)
  • 2 tbsp coriander seed
  • 1 tsp cumin seed
  • 1/2 tsp mustard seed
  • 8 peppercorns
  • 1/2 tsp turmeric powder

Wet Masala Ingredients:

  • 1 cup freshly grated coconut (or wet frozen coconut)
  • Small lime size ball of tamarind soaked in hot water (enough to make 1 tbsp thick paste)
  • 1 medium onion cut into small cubes
  • 2 cloves garlic
  • 1 tbsp cooking oil

Curry Ingredients:

  • 1 medium chopped tomato
  • 1 medium chopped onions
  • 2 tbsp cooking oil
  • 1/4 tin coconut milk
  • Salt as per taste

Direction:

  1. Clean, wash and marinate salmon with the ingredients mentioned under Marination ingredients and keep aside for 1 to 2 hours (the more the better).
  2. Now you can either bake or fry this salmon and keep aside;
  3. Grind all the dry masala ingredients till fine and keep aside;
  4. Roast coconut in a pan till slightly brown and keep aside;
  5. Add 1 tbsp cooking oil and fry onion till slightly brown in colour;
  6. Now grind roasted coconut, onion with tamarind paste and garlic till fine and now add the dry grounded powder and grind one round till both the wet and dry ingredients mix up;
  7. In a cooking pot/pan heat cooking oil and fry onion till slighter tender;
  8. Now add tomato and cook till it melts down;
  9. Add the ground masala, coconut milk & salt and bring it to a boil;
  10. Add Salmon and cook on slow flame for around 10 minutes taking care not to stir much.

Salmon Coconut Curry is now ready to serve either with rice or flat bread. Enjoy!!
